Focus on Food Herbs and Spices Open a jar of cinnamon and sniff it. Does it remind you of cinnamon rolls or pumpkin pies? When you smell oregano, do you think of pizza? Cinnamon and oregano are seasoners. There are fi ve types of seasoners you can use to add fragrance and fl avor to food: spices, herbs, aromatic seeds, seasonings, and vegetable spices. Spices are bits of bark, fruits, fl owers, and roots. For example, cinnamon is from bark. Nutmeg and pepper are from the fruit. Saff ron is from the fl ower. Ginger is from the root. Herbs are leaves from certain shrubs. Bay leaves, dill weed, parsley, sage, and basil are herbs. Aromatic seeds are seeds that are tasty or scented. Examples are caraway seeds, celery seeds, mustard seeds, poppy seeds, and sesame seeds.
