Chapter 1 Food Science: An Old but New Subject
Even if you never earn a living working with food, the problem-
solving skills you develop in this class will be helpful. You can use
these skills as you make consumer choices about food. Every time you
buy a product, you are casting a vote. Every time you eat, you are
affecting your health and potentially the health of future generations.
This course can give you the background and understanding you
need to decide wisely.
Some processing techniques reduce the nutrient content of certain
foods. Some ingredients have been linked with health problems,
and some food preservation methods have sparked environmental
concerns. People who do not understand food processing are quick
to criticize it. By knowing about the science behind these issues, you
will be able to make informed decisions.
Information from this class will help you understand food labels
and analyze new products. This, in turn, will help you enjoy the
benefi ts of today’s food supply while avoiding potential hazards. You
will feel equipped to make the best decisions when buying food for
yourself and for others.
Understanding how scientifi c principles relate to food can also
help you become a better cook. You might use knowledge from this
class to create and adjust recipes. Even if not interested in preparing
food, you will know the basic guidelines for maintaining food quality
and safety. Knowing about food and its impact on the body will
prepare you to make healthful choices. See 1-8.
