Chocolate and Cocoa Beverages
Hot chocolate is made from unsweetened chocolate. Cocoa is made from cocoa
powder. Both of these beverages contain milk. This means you must use low tempera-
tures to prevent scorching.
Do not allow hot chocolate or cocoa to boil after adding milk. Beating these bever-
ages with a rotary beater until foamy will keep the milk from forming a scum layer. If
desired, you may fl avor either beverage with vanilla extract and top with marshmallows
or whipped cream.

and Improving
Systems
Suda is a time-
study engineer.
Food product
manufacturers hire
her to study the way their assembly line workers
perform tasks. The manufacturers want Suda to help
them fi nd ways to increase production. Suda analyzes
the placement of equipment and supplies. She also
looks at the physical motions involved in doing each
job. Then she improves the system or designs a new
system that will eliminate wasted and nonproductive
motions.
