13. Reading Read through six snack, sandwich,
pizza, and/or beverage recipes. Make a list
of at least five ready-to-use ingredients that
would be helpful to have on hand if you were
preparing these recipes.
14. Research, Technology, Reading, Writing
Conduct online research to learn the meaning
of the term bliss point and how it is used in
the food industry in the development of snack
foods. Summarize your findings in a one-page
paper. Edit and refine your writing to ensure
your ideas are presented in a logical, orga-
nized manner that is clear to the reader.
15. Math Find a sandwich recipe with a yield
of 8 servings or fewer. Copy the recipe and
calculate how much of each ingredient would
be needed to serve 40 party guests.
16. Science This activity illustrates some of the
characteristics of carbonated beverages. Drop
a tablespoon of raisins into a clear plastic cup
filled with a clear carbonated soft drink and
note what happens. Note that a soft drink is a
gas-in-liquid solution in which carbon dioxide
gas is dispersed in water. The gas forms
bubbles that attach to the raisins and raise
them to the surface of the beverage. When
the bubbles break, the raisins drop back to the
bottom of the cup and the cycle is repeated.
17. Research, Speaking In a small group,
research some aspect of the traditional
Japanese tea ceremony. Give a group
presentation using digital media and visual
displays to help convey the information and
improve understanding.
18. Math Suppose you are asked to make coffee
for four people. How many tablespoons of
ground coffee should you use to make four
6-ounce servings of regular strength coffee?
19. Writing Search cookbooks or online to find a
sandwich or pizza recipe that appeals to you.
Read the recipe. List the tasks that you should
perform before you begin preparing the recipe,
also referred to as mise en place.
20. Math Analyze your favorite sandwich to deter-
mine its sodium content. Identify ingredients
that are higher in sodium and suggest alterna-
tives that are lower in sodium. Prepare a chart
comparing the sodium content of your favorite
sandwich with the sodium content in your modi-
fied sandwich recipe. Calculate the percent
decrease in sodium.
21. Career Readiness Practice Most employers
value employees that can set and achieve
reasonable, attainable goals. Here are a few
things you need to know about goals. Goals
should
be specific, measurable, attainable,
realistic, and timely

have a target deadline (either short-
term—several months, or long-term—
several years)
Think about your snack habits and how it
relates to your health. In writing, set a goal
for improving the healthiness of your snacks,
determine how you will measure achieve-
ment of this goal, and identify a deadline for
meeting it.

22. Analyze Make a nutrient analysis table to
compare the calorie, fat, sodium, fiber, and
added sugar content of a processed snack
food with that of a healthy snack alternative.
In class, identify the two foods you compared
and what you learned from your analysis.
23. Create Following the format of the recipe
for Mix and Match Fruit Slushies, construct
a mix and match recipe table for pizza. Your
table should have columns for Crust, Sauce,
Toppings, and Cheese. List at least four
healthy options in each column. When your
table is complete, choose at least one option
from each column to create your desired pizza
variation. Give your dish a name.
24. Evaluate Prepare several coffee blends.
Evaluate the color, aroma, and flavor of each
blend. Identify the blend you prefer and explain
why you prefer it.
