specialize in one food, such as preparing fancy
appetizers or baking beautiful wedding cakes.
Other caterers prepare complete meals and supply
serving equipment and workers for the event.
The catering service may be on-premise or
off-premise. On-premise catering takes place at
the caterer’s place of business. The caterer may
have a banquet hall with an attached kitchen. On-
premise catering also takes place at the hotels and
restaurants that offer catering services, 4-7. Other
organizations, such as private clubs, may provide
on-premise catering.
Off-premise catering occurs when the function
is held away from the caterer’s place of business,
such as picnics, clubs, and private homes. Caterers
of off-premise events must have special trucks or
vans that can transport foods safely to the location
of the event.
Caterers can operate from their own homes
or from a separate business location. Some cater-
ers have large businesses with many employees,
while other caterers work alone. Caterers must
serve each function according to a preset timetable.
They must work closely with the event coordina-
tor, decorator, entertainment manager, and cus-
tomer. Above all, caterers must be fl exible enough
to handle last-minute changes. These include peo-
ple who arrive late, changes in the weather, and
performances that end early or run late.
Recreation Businesses
Often foodservice is offered as part of a rec-
reation business. Examples include sports arenas,
zoos, movie theaters, and museums, 4-8. With
foodservice within the zoo, a hungry family does
not have to leave the zoo to fi nd food. One wildlife
center in Texas is complete with a hilltop restau-
rant where diners can watch hundreds of rare and
endangered animals roam. Most ballparks have
the traditional hot dogs and peanuts, but sports
arenas offer many popular foods, such as burgers,
salads, burritos, and ice cream.
Some sports and entertainment facilities offer
fi ne-dining services. For example, the Levy Res-
taurants organization provides restaurant-quality
foodservice at a variety of sports and entertain-
ment venues.
Shopping Centers and Stores
A foodservice business may be located within
another business. For example, many brand-name
commercial chains provide foodservice within
shopping malls and stores.
