A pizza pan is a large, round baking sheet with perforations (holes) to make a crisp crust. A baking sheet is a flat, rectangular sheet of metal used for baking biscuits, rolls, and pastries, as well as flat items like cookies. A jelly roll pan is a baking sheet with a short lip on all four sides. A cooling rack is a raised wire rack that allows air to circulate around hot foods and let heat escape. A pie pan is a round, shallow, sloped-sided dish with a flat or fluted edge to hold a piecrust. A springform pan has a removable bottom and a collar with a latch for easy removal. It is used to make cheesecakes, tortes, or other baked goods with a delicate bottom crust. Kitchen Tools Kitchen tools are small, handheld tools used during food preparation. Some are used for cooking food and others are used to prepare food for cooking. Each tool is designed to make a particular kitchen task easier. Kitchen tools include utensils and knives. Utensils Utensils are used to perform a variety of kitchen tasks, such as measuring, lifting, mixing, and cutting (Figure 17.6 on the next page). Liquid measuring cups are made from either glass or clear plastic, and are used when measuring quantities of liquids. They have a spout for pouring, a handle, and additional space at the top to prevent spilling. FEATURED Food Purchasing Agent Food purchasing agents buy a vast array of food products for companies and institutions. They attempt to get the best deal for their companies—the highest quality at the lowest possible cost. These agents accomplish this by studying sales records and inventory levels of current stock and identifying for- eign and domestic suppliers. Food purchasing agents also keep abreast of changes affecting both the supply of and demand for needed products. Education Requirements tend to vary with the size of the organization. Large stores and distributors prefer applicants who have a bachelor’s degree with an emphasis in busi- ness. Many manufacturing firms put an even greater emphasis on formal training, preferring applicants with a bachelor’s or master’s degree in engineering, business, economics, or one of the applied sciences. Job Outlook Employment for purchasing agents is expected to increase slower than the aver- age for all occupations.
