Unit 7 Working with Complex Food Systems
Purpose
One method of separating complex food mixtures uses a variety
of fi lters. Many homes use fi ltration devices every day. One common
device is a pitcher or faucet attachment that fi lters water with activated
charcoal. Another common type of household fi lter is the fi lter papers
used for brewing coffee. In this experiment, you will determine what
types of ingredients can be separated by each of these common fi lters.
Equipment
permanent marker
drip coffeemaker or strainer and mixing bowl
metric measuring spoons
small bowl
100-mL graduated cylinder
fi ltration pitcher with fi lter
Supplies
3-ounce plastic cups (3 per lab group member)
3 coffee fi lters
2 mL teaspoon) vanilla extract
550 mL (2¼ cups) water
50 mL cup) soft drink
50 mL cup) Italian-seasoned chicken broth
Procedure
1. Use a permanent marker to label three plastic cups with the
name of each lab group member.
2. Place a coffee fi lter in the basket of the coffeemaker or in a
strainer over a mixing bowl.
