Unit 7 Working with Complex Food Systems
Purpose
The greatest solvent is water. Because of water’s polar nature,
many compounds can be dissolved in it. Some compounds can be
pulled out of or extracted from their source by soaking and/or
simmering the source in water. This is known as rendering. In this
experiment, you will simmer chicken wings in a variety of solutions
to determine which solution is most effective for extracting gelatin.

Safety
Wear safety glasses when heating glass
beakers.
Use beaker tongs to move hot beakers.
Sanitize all surfaces that come in contact
with raw meat products.
