simmer them. For casseroles, you only
need to blend or layer the ingredients in a
greased pan and bake, 14-7. The chart in
14-8 shows you the formula for creating a
stew or casserole. As you can see, almost
any food can be part of a one-dish meal.
One-dish meals give you a chance to
be creative in the kitchen. That’s because
it’s up to you to choose the foods to use.
When choosing foods, think about how they
will look and taste together. Pick foods with
colors, textures, and flavors that blend well.
One-dish meals are a good way to use
leftovers. These meals will save you money
if you use leftovers that would have been
wasted and thrown away. Remember to only
use leftovers that have been safely stored.

Pizza
Pizza is a favorite one-dish meal. See
14-9. It was first made in Greece thousands
of years ago. The Greeks made pizza by
topping flat bread with olive oil, spices, and
other foods. Traders took this interesting
bread to Italy where it became very popular.
Soon pizza spread all around the world. The
pizza we eat today is much like the pizza
found in Italian markets 200 years ago.
Today, pizza is sold in many different
forms. You may buy a freshly made pizza at
a restaurant or supermarket. You can buy
frozen pizza at a supermarket to cook later.
You may choose to make a pizza
from scratch.
Pizzas have a crust and toppings. The
crust may be thin or thick, crispy or soft. It
can be large enough to serve many people,
or it can be small enough to serve just
one person.
Almost any type of bread can be used
for the crust. Often, the crust is made from
soft dough. This dough can be made from
scratch using flour, water, yeast, and salt
(See Chapter 19.). You also could make
dough with a biscuit mix or use refrigerated
biscuit dough. Another choice is to use
frozen pizza dough or buy a ball of dough
from a pizza restaurant. You’ll need to pull
and stretch the dough to line a pizza pan or
other baking pan.
It is even faster to buy a ready-made
crust. You can find ready-to-eat crusts
in the bread section of the supermarket.
Frozen, ready-to-bake crusts are another
option. Instead of a traditional crust, you
could use English muffins, tortillas, or
lengthwise slices of French or Italian bread.
Pizza can include almost any combina-
tion of ingredients. Start by thinking about all
the toppings you can order at your favorite
