Group Choices
1 4 cups cooked rice, pasta, or noodles
4 cups cooked, sliced potatoes
2 2 cups cooked, dry beans
1 cup raw or cooked ground or cubed meat, fi sh, or poultry
3 2 cups fresh, frozen, or canned (drained) vegetables
4 1 can vegetable soup
1 can cheese soup plus 1/2 cup liquid*
1 can cream soup plus 1/2 cup liquid*
1 2/3 cups vegetable juice
*Liquid can be milk, vegetable juice, or water.
5 1/2 cup bread or cracker crumbs
1/2 cup corn fl akes
1/3 cup grated cheese
8 uncooked biscuits
Creating One-Dish Meals
Here’s how to create a casserole:
1. Using the chart above, choose one food from each of the groups.
2. Grease a three-quart casserole pan.
3. Cover bottom of pan with one of the foods from Group 1.
4. Spread the food from Group 2 over the food already in the pan.
5. Repeat Step 4 for the remaining groups.
6. Bake at 400°F (200°C) for 30 to 40 minutes. The top should be bubbly and brown.
7. Cool 10 minutes and serve.
Serves 6
Here’s how to create a stew:
1. Using the chart above, choose one food from Group 1, 2, 3, and 4. You will need to
double the amount of ingredients used from Group 4.
2. Place all the ingredients in a four-quart pot.
3. On the cooktop, simmer on medium heat for 30 to 40 minutes. Stir every 10 minutes.
Serve immediately.
