Introduction
Hospitality Services introduces you to careers in hospitality. The hospitality industry offers careers in
fi ve areas: foodservice, lodging, travel, tourism, and recreation. The textbook is organized into six parts.
Part One provides an overview of the entire industry, including the essential role of customer service.
Part Two presents the foodservice industry. You will be introduced to the artistry of food prepa-
ration and service. You will also learn the essentials of food safety and sanitation. The basics of run-
ning a restaurant, including purchasing and receiving, are presented. You will also get to see how
hotel foodservice works.
Part Three presents all aspects of the lodging industry. You will learn about the front offi ce,
housekeeping, security, and engineering.
Part Four brings three distinct segments of hospitality to life. You will learn the basics of travel and
tourism and explore the world of recreation. You will also discover career options in each segment.
Part Five looks at the business behind the glamour. The basics of business structures and man-
agement principles are presented. An overview is provided of each of these support areas: human
resources, marketing and sales, and accounting. A chapter on safety and emergency procedures
shows you how to keep yourself and your guests safe. A chapter on legal and ethical considerations
tackles these important issues in the industry.
Which hospitality career is right for you? Part Six helps you relate your talents and interests to
the various careers in hospitality. Skills for success are presented to ensure your personal success in
your chosen career. If you want to run your own business, the concluding chapter points you in the
right direction.
About the Authors
Johnny Sue Reynolds is well known and admired among high school hospitality teachers in
Texas. She has master’s and doctorate’s degrees and certifi cation in Foodservice Management. Johnny
Sue is Professor Emeritus at the University of North Texas and former Associate Dean and Hospital-
ity Management Department Chair. She is currently an educational consultant who enjoys teaching
and developing online courses, developing FCS assessments, and traveling. Reynolds has taught
family and consumer sciences/hospitality courses in Texas middle schools and high schools, as well
as adult education courses. She has found a love of teaching and mentoring, both undergraduate and
graduate students, through her online courses. She earned a B.S. degree from the University of Mary
Hardin-Baylor, a M.S. degree from the University of North Texas, and a Ph.D. from Texas Woman’s
University. Reynolds is a proud native Texan and has lived all over the state.
Dorothy Chase has an exciting career in the fi eld of hospitality, travel, and tourism, and has taught
thousands of students in the United States and Canada. Dorothy is Professor Emeritus at Central
Washington University and former co-chair of the Department of Family and Consumer Sciences.
She has taught, researched, and collaborated in local tourism promotion through Central Washington
University, South Texas College, Confederation College, Success/Angus Business College, and the
Kyung Dong University of South Korea. Always active in both professional certifi cation and commu-
nity development associations, Dorothy has a particular interest in heritage tourism. She has also been
fortunate to live in places known for excellent outdoor recreation and tourism—central Washington
state, Rio Grande Valley, upstate South Carolina, and on Lake Superior and Lake of the Woods in
Northwestern Ontario. Her business and leisure travels have taken her to over 50 countries. She
holds a B.A. from University of Winnipeg, Ed. Cert. and Cert. Mgmt. from University of Manitoba,
M.Ed. from Lakehead University, and a Ph.D. in Parks, Recreation and Tourism Management from
Clemson University.
