Unit 1 The Science of Food
Purpose
In this activity, you will practice using information in data tables.
You will be evaluating data on the types of health claims made on
new food products between 1990 and 2000. During the last decade of
the twentieth century, many new food products were a result of
consumer demands for healthier foods. Health claims centered around
the following topics: calories, fat, salt, cholesterol, fi ber, calcium,
additives, sugar, naturalness, and organics.

Procedure
1. Set up a data table with 11 rows divided into 5 columns.
2. The headings for your columns are Focus of Claims, 1990, 1995,
1996, and 2000.
3. Record the following types of health claims in your data table
with the accompanying statistics, which are listed in order from
1990 to 2000. New products with claims focusing on additives
(371; 167; 143; 269), calcium (20; 21; 35; 158), calories (1,165; 1,161;
776; 261), cholesterol (694; 163; 223; 189), fat (1,024; 1,914; 2,076; 1,057),
fi ber (84; 40; 12; 81), naturalness (754; 407; 645; 743), organics
(324; 538; 645; 844), salt (517; 205; 171; 131), and sugar (331; 422;
373; 61).
4. Add two rows to the bottom of your data table. The fi rst row will
list the total products with health claims each year. The second
row will list the total of other new products developed that year.
(Hint: Use data from the table created in Activity 1A to complete
the second row.)
